In the land of the trulli, you will discover a different way of living. The dry stone walls that shape the land tell the story, as do the terraces that embrace the slopes and the ancient, almost familiar presence of olive trees. Here, the beauty of the landscape blends with a slow and tangible rhythm, from which well-crafted things are born, like our oil. Just a few kilometers from the trulli, in our small farm Humus Nature<\/strong><\/a>, we produce extra virgin olive oil as the result of a project focused on protecting the territory.<\/p>\n

Humus Nature was founded in 2021 through the initiative of a group of small landowners and olive growers who work together to care, season after season, for a precious and delicate ecosystem.<\/p>\n

The World of Trulli and Olive Oil<\/h2>\n

The area where Humus Nature operates lies between the Plain of Monumental Olive Trees<\/strong> and the hilly countryside of Fasano. As soon as you arrive, you are struck by the impressive number of massive olive trees.<\/p>\n

Many of these trees were planted centuries ago: roots and stones intertwine. Here, people have stubbornly used stone, wind, sun, and patience to build their creations, from trulli to dry stone walls, in an effort to coexist respectfully with nature.<\/p>\n

We affectionately call the olive trees “grandparents”<\/strong>: majestic, full of wrinkles, proud and fragile at the same time. Intensive farming is not welcome here. Our oil is the natural result of this choice.<\/p>\n

If you choose a trullo, you often choose a rhythm. It is the same slow and tangible rhythm you find in a well-made olive oil.<\/p>\n

I Traminz and Agricultural Practices<\/h2>\n

In some areas, fields are difficult to reach with machinery, and the work has remained similar to that of our ancestors: slow pace, daily labor, repeated gestures. This is where “I Traminz”<\/strong> is born, an extra virgin olive oil that reflects the place it comes from.<\/p>\n

We choose early harvesting<\/strong>, with lower yields but allowing us to preserve the nutritional properties of the olives and the oil. We carry out milling as quickly as possible<\/strong> and cold extraction<\/strong> in a two-phase mill. This helps preserve substances and aromas, resulting in a fruity oil that pairs well with almost anything.<\/p>\n

We follow seasonality and focus on less invasive practices: light pruning, grass management timed to support pollinating insects, and attention to biodiversity. We also take part in the “Bee Corridor”<\/strong> project, creating a haven for these insects.<\/p>\n

Especially here in the South, where water is precious, we use it carefully. The olive tree, and particularly many local cultivars, is suited to dry farming: irrigation is not essential. We avoid waste and unnecessary consumption.<\/p>\n
