You will not find grand monuments or sights to tick off a list; you will find something rarer: a place where time still keeps a different rhythm. Perched on a limestone terrace of the eastern Murgia, about four hundred metres above sea level, this small town in the province of Brindisi looks down over the Itria Valley, with a view that sweeps from trulli scattered among the olive trees to the outlines of Ostuni and Martina Franca on the horizon.

The old town is a maze of lanes paved with chianche, the limestone slabs worn smooth by centuries of footsteps, where whitewashed houses, stone arches, flower-filled balconies and outdoor staircases chase one another with no apparent order, creating an atmosphere that many compare to an Eastern village. Cisternino holds the Touring Club Italiano’s Orange Flag, is listed among the Most Beautiful Villages of Italy and is a Cittaslow town. These are not decorative titles: they describe exactly what you will find.

But there is one more reason Cisternino became famous, and it is a scent: the smell of grilled meat that sweeps through every lane of the old town at sunset, drifting out of the butcher shops with a fornello, where for generations the locals have dined by choosing meat at the counter and having it roasted on the spot. Eating here, seated on straw chairs between the white walls of an alley, is one of the most authentic culinary experiences in Puglia.

[/vc_column_text][vc_single_image onclick=”link_image” image=”54319″ add_caption=”yes” img_size=”full” alignment=”center”][vc_column_text el_class=”frontheading”]

What to see in the old town

The best way to discover Cisternino is to have no itinerary. Enter through the Torre Grande (also called Porta Grande), the seventeen-metre-high Norman tower topped by a statue of Saint Nicholas that marks the entrance to the old town, and let your curiosity guide you. The four historic quarters, Bère Vécchie (the old village), Scheledd, u Pantène and L’ìsule, interlace in a labyrinth where getting lost is part of the pleasure.

Sooner or later every stroll leads to Piazza Vittorio Emanuele, the heart of the town, overlooked by the Clock Tower. This is where life in Cisternino gathers: café tables, evening chatter, artisan gelaterias. From this square, climbing towards the upper part of the village, you reach the Chiesa Madre di San Nicola, which houses the town’s finest work of art: a Madonna and Child carved in stone in 1517 by Stefano di Putignano. Do not miss the Palazzo del Governatore and the Palazzo Vescovile either, which you will come across while walking along the city walls.

[/vc_column_text][vc_single_image onclick=”link_image” image=”54327″ add_caption=”yes” img_size=”full” alignment=”center”][vc_column_text el_class=”frontheading”]

But the real spectacle lies outside the old town. Stop at the Villa Comunale: the public gardens offer an extraordinary viewpoint over the Itria Valley. From here your gaze takes in stretches of olive groves, trulli scattered across the countryside and the outlines of the neighbouring villages. At sunset, the golden light turns this view into one of the most beautiful panoramas in all of Puglia.

[/vc_column_text][vc_single_image onclick=”link_image” image=”54287″ add_caption=”yes” img_size=”full” alignment=”center”][vc_column_text el_class=”frontheading”]

The butcher shops with a fornello: Cisternino’s ritual

Cisternino is the capital of the fornelli pronti, and this tradition is no tourist invention: it is how the locals have eaten for generations. The way it works is simple and irresistible: step into one of the butcher shops in the centre, choose your meat straight from the counter, bombette (rolls of capocollo stuffed with canestrato cheese), gnummeredd (skewers of lamb offal), sausages, zampina, veal chops, and wait while it is roasted on the spot in the wood-fired oven. Then you sit at the tables each butcher sets out in the alley in front of the shop and dine outdoors, surrounded by the white walls of the village, with a glass of local red wine.

[/vc_column_text][vc_single_image onclick=”link_image” image=”54679″ add_caption=”yes” img_size=”full” alignment=”center”][vc_column_text el_class=”frontheading”]

For everyday shopping, the centre of Cisternino has grocery stores and a well-stocked supermarket. But the real pleasure is buying directly from local producers: oil, wine, fresh cheeses, seasonal fruit. Ask your hosts, who will know the right places.

The nearest beaches

Cisternino is not on the sea, but the sea is not far. The Adriatic coast can be reached in twenty to thirty minutes by car, and there is plenty to choose from.

The Torre Guaceto Nature Reserve is the most evocative destination: a protected marine area with crystal-clear water, Mediterranean scrub and beaches of pale sand. It lies about 25 km from Cisternino. Access to the protected area is regulated, and in high season it is best to arrive early.

To the north, the beaches of Fasano and Savelletri offer equipped lidos alternating with free stretches of rocky coast. Further north still, Polignano a Mare, with its little beach tucked between the cliffs, is a classic stop for a day trip, although it is farther away (about 40 km).

To the south, Ostuni Marina and the surrounding beaches offer long stretches of sand with shallow water, ideal for families with children. The distance is about 25 km.

Festivals and events

On the first Sunday of August, Cisternino celebrates its patron saints Quirico and Giulitta with processions, concerts in the square, spectacular festive lights and fireworks. It is the most heartfelt festival in the town, and it is worth planning your stay around it, if only for the atmosphere that fills the village.

The weekly market is held every Monday. On the third Sunday of every month, the old town hosts the antiques market.

Throughout the summer there is a succession of village fairs, evening markets and food nights in the lanes of the centre.

How to get there and where to park

Cisternino is easy to reach from both Puglia airports. From Brindisi-Casale airport the distance is about 50 km (45 minutes by car). From Bari-Palese airport it is about 80 km (an hour and a quarter). In both cases, a rental car is practically essential: Cisternino and the surrounding countryside are not served well enough by public transport for a holiday.

Cisternino is also on the Ferrovie del Sud Est railway line, with a station in town, useful for excursions to Martina Franca and Locorotondo without a car, but with limited timetables.

As for parking, the old town is pedestrianised. You will find free and paid car parks close by, along Via San Quirico and Via Roma. On summer evenings the spaces fill up quickly, especially at weekends: arrive a little early if you want to dine at the fornelli.

Where to stay in Cisternino: our trulli

The countryside around Cisternino is the heart of the Itria Valley: gentle hills covered in olive trees, vineyards and oak woods, dotted with trulli and restored masserie. This is where TrulliOnLine has its widest selection of homes, with nine properties suited to every kind of stay: from the couple seeking intimacy to the large group of friends or extended family.

For couples and small groups

Trulletto Terra di Panza is a nest for two, perfect for those seeking quiet and simplicity. Wide open spaces, a pool, hammocks in the shade and a big masonry table for outdoor dinners: it is the home designed for long tables, conversations that run late and children playing in the garden. It sleeps up to nine people.

Trullo di Laura welcomes up to ten guests in a complex of trulli with five bedrooms, carefully furnished with wrought iron, cedar wood and linen fabrics. Every room keeps its original conical ceiling with exposed beams. Six kilometres from the centre of Cisternino.

Borgo Specchiaruzzo, with space for fourteen people just four kilometres from the centre, is a genuine miniature village in the heart of the countryside.

Cisternino and the Itria Valley

Cisternino is the ideal base for exploring the whole Itria Valley. Ostuni, the White City, is less than twenty minutes away. Alberobello, with its UNESCO World Heritage trulli, is half an hour away. Martina Franca, with its Baroque architecture and the Itria Valley Festival, is only ten minutes away. Locorotondo, the round village overlooking the valley, is just as close. And gastronomic Ceglie Messapica, less well known but perhaps the most authentic of them all, is fifteen minutes away.

[/vc_column_text][vc_gallery
