We cannot help but enjoy it \u2013 indeed, using <strong>Apulian olive oil<\/strong> for <strong>Mediterranean cuisine<\/strong> is like putting on a crown and feeling like a king.<\/p>\n<p>I can\u2019t imagine Puglia without olive trees, both the majestic ones, and the slimline but just as productive ones.<\/p>\n<p>The <strong>olive tree<\/strong> has been cultivated here <strong>since the first millennium BC<\/strong>, and there are <strong>ancient trees<\/strong> whose imposing presence almost takes your breath away.<\/p>\n<p>Living beings, breathing with us, wrapped in a blanket of wind that twists and turns them until they look as if Mother Nature had purposely sculpted them that way. <strong>Olive trees<\/strong> that tell of years of back-breaking toil and of undying love.<\/p>\n<p>There are over <strong>50 million olive trees<\/strong> here in Puglia, making it the <strong>world\u2019s leading producer<\/strong> of olive oil.\u00a0<!--more--><\/p>\n<p>Pruning, harvesting and squeezing the olives, then bottling the juice \u2013 actions we carry out with a sort of atavistic dedication. For us Apulians, <strong>every single drop of olive oil<\/strong> is <strong>precious<\/strong>, so much so that this has led to a thousand and one stories being invented to prevent waste \u2013 spilling olive oil brings bad luck, for example.<\/p>\n<p>Pour <strong>a little oil onto a slice of bread<\/strong> and savour the taste: it will uncover a world of flavours and images that you will no longer be able to do without.<\/p>\n<p><strong>Puglia<\/strong> is full of <strong>olive groves<\/strong> that express the nature of the soil and the very <strong>image of the region<\/strong>, fields of olive trees bordered by <strong>dry stone walls<\/strong>, in a fascinating, timeless landscape. <strong>Majestic trunks<\/strong> supporting luxuriant, <strong>silvery-green foliage <\/strong>glistening in the sun; and when the rains come to the olive trees, Puglia is blessed by love and flavour.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-338\" src=\"https:\/\/www.trullionline.com\/wp-content\/uploads\/olio-della-puglia-1024x567.jpg\" alt=\"\" width=\"525\" height=\"291\" \/><\/p>\n<p>There are several types: <strong>Protected Designation of Origin (PDO) Collina di Brindisi extra virgin olive oil<\/strong>, for example, produced in <strong>Cisternino<\/strong>, <strong>Ostuni<\/strong>, <strong>Ceglie Messapica<\/strong>, <strong>San Vito dei Normanni<\/strong>, is made mostly from the <strong>Ogliarola<\/strong>, <strong>Cellina di Nard\u00f2<\/strong>, <strong>Coratina<\/strong> and <strong>Leccino<\/strong> varietals.<\/p>\n<p><strong>Dauno PDO extra-virgin olive oil<\/strong>, on the other hand, comes from Foggia province.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <strong>Terra d&#8217;Otranto PDO extra-virgin olive oil<\/strong> is produced in the <strong>Salento<\/strong> using <strong>Cellina di Nard\u00f2<\/strong> and <strong>Ogliarola<\/strong>.<\/p>\n<p>While the oils in the <strong>Terra di Bari PDO<\/strong> are from olives such as <strong>Coratina<\/strong>, <strong>Cima di Bitonto<\/strong> and <strong>Cima di Mola<\/strong>; brands include <strong>Olio di Castel del Monte<\/strong>, and <strong>Olio della Murgia dei Trulli e delle Grotte<\/strong>.<\/p>\n<p>We can also choose from various <strong>types of olive oil<\/strong>: we might prefer a harmonious, <strong>intense taste<\/strong>, or an olive oil with an almondy scent, or else a decidedly fruity oil for <strong>true connoisseurs<\/strong>, or the <strong>slightly pungent<\/strong>, bitter oil that itches the back of your throat, or a sweeter <strong>green oil<\/strong>.<\/p>\n<p>Apulian olive oil is also exquisitely <strong>healthy<\/strong>, with its high <strong>oleic acid <\/strong>content, which helps prevent cardiovascular diseases as well as lowering the amount of bad cholesterol in the blood.<\/p>\n<p>Our oil comes in various qualities: the more delicate <strong>golden yellow<\/strong> oils, good for <strong>raw dishes<\/strong>; the <strong>more intense yellow <\/strong>oils, ideal for <strong>steamed dishes<\/strong> and the <strong>greenish<\/strong> ones, great for <strong>roasts<\/strong> or <strong>preserving vegetables<\/strong>.<\/p>\n<p>Take a little oil and sniff it: images of <strong>bread and tomato<\/strong> might come into your mind straight away. Does it have that <strong>velvety consistency<\/strong> that makes it feel like you\u2019re tasting it already? Dip a fingertip in and have a taste: it will be bitter sweet with a tingle of saltiness, dry leaves and the <strong>white drapes <\/strong>which were once used for the olive harvest.<\/p>\n<p>The flavour reminds us of <strong>playing<\/strong> in the kitchen while Mum cooked our dinner or <strong>relaxing<\/strong> in front of the fire.
